The Scandinavian Grind is a wide flat bevel that runs to the edge of the blade There is little or no secondary bevel. The primary angle is engineered to match the quality of the steel and intended use. The result is a very keen edge that provides excellent control of the cut. The downside is that a full Scandinavian edge is fragile.

The number is roughly describing the bevel, but it doesn't seem to really mean anything. Other than the bevel, the grind is usually asymmetric. Usually the left side is more flat and the right side is more convexed for food release. If you only change the bevel angles, it doesn't change that fact. This is less dramatic on thinner knives (lasers).
Sharpening this hard, thick blade, and keeping a strong cutting edge is the challenge. This is where bevel angles come in. We use bevel angles to gradually bring the two planar surfaces together. Using bevel angles requires the least amount of effort in removing metal, thus making it the fastest way to sharpen.
It appears to be common for (knife?) makers to grind the bevels using a flat platen (and a rest) by passing the blade across the belt (90 degree angle). Obviously this depends on personal skill but I have a hard time imagining doing this on a 40" blade and not getting high/low spots.
